Ingredients

  • 2 cups all-purpose flour (240 g)
  • 1 tbsp baking powder (12 g)
  • 1 tsp salt (5 g)
  • 6 tbsp cold unsalted butter, cubed (85 g)
  • 3/4 cup whole milk (180 mL)

Sausage Gravy

  • 1 lb breakfast sausage (450 g)
  • 1/4 cup all-purpose flour (30 g)
  • 2 1/2 cups whole milk (600 mL)
  • 1 tsp black pepper
  • 1/2 tsp salt

Directions

  1. Preheat oven to 425°F (220°C).
  2. Mix flour, baking powder, and salt. Cut in butter until crumbly.
  3. Add milk and stir until a dough forms.
  4. Pat dough 1 inch thick and cut biscuits.
  5. Bake 12–15 minutes until golden brown.
  6. Brown sausage in a skillet, breaking it into crumbles.
  7. Stir in flour, then slowly add milk.
  8. Simmer until thick. Season with pepper and salt.
  9. Split biscuits and pour gravy generously over top.
