Ingredients

  • 1 1/2 lb boneless skinless chicken thighs, cut into bite-sized pieces (680 g)
  • 1/2 cup cornstarch (60 g)
  • 1/4 cup all-purpose flour (30 g)
  • 1/2 tsp salt (3 g)
  • 1/2 tsp black pepper (3 g)
  • Oil for frying

Orange Sauce

  • 1/2 cup orange juice (120 mL)
  • 1 tbsp orange zest
  • 1/4 cup soy sauce (60 mL)
  • 1/4 cup brown sugar (50 g)
  • 2 tbsp rice vinegar (30 mL)
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 1 tbsp cornstarch (8 g)
  • 2 tbsp water (30 mL)

Optional

  • 2 green onions, sliced
  • Additional orange zest

Directions

  1. Coat the chicken with salt, pepper, flour, and cornstarch.
  2. Fry the chicken until golden brown and crispy. Remove and set aside.
  3. In a bowl, combine orange juice, soy sauce, brown sugar, rice vinegar, garlic, and ginger.
  4. Pour the sauce into a skillet and bring to a simmer.
  5. Mix cornstarch and water, then stir into the sauce until thickened.
  6. Add the fried chicken and toss until fully coated in the glossy orange sauce.
  7. Garnish with green onions and orange zest.
  8. Serve immediately over rice.
