Ingredients

  • 8 thick slices brioche bread
  • 8 oz cream cheese, softened (225 g)
  • 1/4 cup powdered sugar (30 g)
  • 1 tsp vanilla extract
  • 1 1/2 cups sliced fresh strawberries (225 g)
  • 4 large eggs
  • 1 cup whole milk (240 mL)
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 Tbsp unsalted butter
  • Maple syrup, for serving
  • Powdered sugar, for garnish

Directions

  1. In a bowl, mix together the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Spread the cream cheese mixture onto four slices of brioche, top with sliced strawberries, then place the remaining bread slices on top to make four sandwiches.
  3. In a shallow bowl, whisk together the eggs, milk, cinnamon, and vanilla extract.
  4. Dip each sandwich into the egg mixture, coating both sides well.
  5. Melt the butter in a large skillet or griddle over medium heat.
  6. Cook the stuffed French toast for 3–4 minutes per side until golden brown and cooked through.
  7. Slice each piece in half and drizzle generously with warm maple syrup.
  8. Dust with powdered sugar and serve immediately.
