Chicken Parmesan

Ingredients
- 2 boneless skinless chicken breasts
- 1 cup all-purpose flour (120 g)
- 2 large eggs
- 1 cup Italian breadcrumbs (100 g)
- 1/2 cup grated Parmesan cheese (50 g)
- 1 tsp salt (5 g)
- 1 tsp black pepper (5 g)
- Oil for frying
Sauce & Topping
- 2 cups marinara sauce (480 mL)
- 1½ cups shredded mozzarella cheese (170 g)
- 2 Tbsp grated Parmesan cheese (15 g)
- 2 Tbsp chopped fresh basil (optional)
Directions
- Slice the chicken breasts in half lengthwise to create four thin cutlets.
- In a shallow bowl, combine the Italian breadcrumbs and grated Parmesan cheese.
- Coat each chicken cutlet in flour, then dip into the beaten eggs, then press firmly into the breadcrumb mixture until evenly coated.
- Heat oil in a skillet over medium heat and fry the chicken until golden brown and crispy on both sides.
- Transfer the fried chicken to a baking dish and spoon marinara sauce evenly over each piece.
- Top with the shredded mozzarella and grated Parmesan cheese.
- Bake until the cheese is melted, bubbly, and lightly golden.
- Garnish with chopped basil and serve warm.
