Ingredients

  • 2 large chicken breasts, sliced in half horizontally (about 1.5 lb / 680 g)
  • 1 cup buttermilk (240 mL)
  • 1 egg
  • 1 1/2 cups all-purpose flour (180 g)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • Vegetable oil for frying

Country Gravy

  • 4 tbsp butter (56 g)
  • 1/4 cup all-purpose flour (30 g)
  • 2 cups whole milk (480 mL)
  • 1 tsp black pepper
  • 1/2 tsp salt

Directions

  1. In a bowl, whisk together buttermilk and egg.
  2. In a separate bowl, combine flour, salt, pepper, garlic powder, and paprika.
  3. Dip chicken into the buttermilk mixture, then coat thoroughly in the seasoned flour.
  4. Let the breaded chicken rest for 10 minutes.
  5. Heat oil to 350°F (175°C).
  6. Fry chicken for 4–5 minutes per side until golden brown and crispy.
  7. Remove and drain briefly.
  8. For the gravy, melt butter in a saucepan.
  9. Whisk in flour and cook for 1 minute.
  10. Slowly pour in milk while whisking continuously.
  11. Cook until thickened, then season with salt and pepper.
  12. Pour gravy generously over the fried chicken and serve immediately.
