Ingredients

  • 8 thick slices brioche bread (about 1 loaf)
  • 4 large eggs
  • 1 cup milk (240 mL)
  • 2 tbsp brown sugar (25 g)
  • 1 tsp vanilla extract (5 mL)
  • 1 tsp ground cinnamon (2 g)
  • 2 tbsp butter (28 g)

For Serving

  • Maple syrup
  • Powdered sugar
  • Strawberries, sliced
  • Blueberries

Directions

  1. In a large bowl, whisk together eggs, milk, brown sugar, vanilla, and cinnamon.
  2. Dip each slice of brioche into the mixture, coating both sides.
  3. Melt butter on a griddle or skillet over medium heat.
  4. Cook the bread for 2–3 minutes per side until golden brown.
  5. Transfer cooked French toast to a serving platter.
  6. Dust with powdered sugar.
  7. Top with strawberries and blueberries.
  8. Drizzle generously with maple syrup and serve warm.
